Tortilla Pie

 Mexican cuisine, if you were to compile it simply, is a blend of lime, cheese, chilies and beans. That's just the basic outline, there are a lot more flavors you may compile and a lot more ingredients in this incredible cuisine. I created my own recipe of tortilla pie. I layered tortilla, cheese, pico de gallo, green onion, pan fried soy chili chicken, tomato, bell pepper, cilantro, lime, chipotle fried chili corn, beans and of course more cheese. Then topped it with pepitas, cheese (don't judge), chili powder and finally cross-hatched tortilla strips and baked it in the oven until golden brown and the cheese has melted. This was an original recipe from the top of my mind. :)

Grilled Breakfast Wraps


Another variation of the Grilled Brunch Wraps, but this time including, scrambled egg, cheese, bell peppers, spinach, black beans, and corn, inside a sun-dried tomato tortilla... ;p


Pumpking Butterscotch Loaf!

Tis the fall season!!
I followed this recipe from a very great chef, Kate. Although I added butterscotch chocolate chips, and chopped walnuts ;)

Chocolate Eclairs

This was a feeble attempt at making chocolate eclairs... although they tasted delicious, I didn't have the right supplies for making the shape!!
For anyone making chocolate eclairs in the future... its a great way to get your hands covered in tasty goop.





The monster pancake!!

I have to admit... yea yea... premade buckwheat pancake mix is delicious!!
Especially when you use the pancake itself as a base for EVERYTHING else! Banana, apple, yogurt, granola, cinnamon, chia, maple syrup, butter, and pear... the perfect way to start your morning...




Thanksgiving!!



Oh yes, the feast...
This thanksgiving I whipped up some mini pumpkin tarts, and ginger molasses sandwich cookies for our family and friends. As my dad went mushroom picking, and grab ringing which soon turned into a million crab cakes! I hope everyone had a great thanksgiving surrounded by the people you love <3










Grilled Brunch Wraps


A good way to use your burrito leftovers... and a perfect brunch to satisfy yourself until dinner.
A mix of homemade pico de gallo, corn, guacamole, cheese, chicken, salsa, and sour cream, all wrapped up in a flour tortilla grilled with just enough butter to get the brown crispiness on the tortilla, in the pan.
