My little obsession...

A little known fact about me, (if you didn't already know) I LOVE pasta salads! Especially when they have a creamy dressing! This specific pasta salad is a Mexican pasta salad, and defiantly came in the top 5 of my favourite pasta dishes. (Along with the one below)
This dish consists of: Chorizo sausage, cilantro, corn, black beans, colourful vegetable fusilli noodles (my personal favourite), cherry tomatoes, and/or regular tomatoes, and, of course, THE sauce...
THE sauce is actually something my mum, Claire Watson created, and is sadly, a secret!
Hint: It contains, chipotle paste...

My New Favourite Breakfast...

So, the other day, I wanted a smoothie. But I didn't want just the boring smoothie in a cup. I decided I wanted to try something new...
a smoothie bowl.
Smoothie bowls , or at least the way I make them, are essentially your favourite smoothie mixture, (*preferably more on the solid side than usual), your favourite granola, chopped up fruits, chia seeds, cinnamon, coconut, and a mint garnish.
Below are more specific details.



Smoothie ingredients:                                       Makes: 1 smoothie
(All approximately measured)
  • 2 heaping teaspoons yogurt (I use vanilla OLYMPIC Balkan-style thick and rich KREMA yogurt)
  • 1/2-1/3 cup frozen fruit of choice (strawberries, raspberries, blueberries, mangos, etc...)
  • Splash of milk, coconut, almond, soy, or regular, etc... (*use more if you would prefer a thinner smoothie)
  • 1/2-1 medium-large banana
  • Pinch of cinnamon
  • Large handful of spinach
  • 4-5 mint leaves ( depending on what level of mint you like, I prefer minty smoothies so I put approximately 5-6 mint leaves)
  • 1/2 an avocado
  • 2 medium sized pinches of shredded coconut
I use a small "magic bullet", and pulse until their are no chunks left.
*If you own a larger blender and would like more smoothie, than just double or triple your ingredients. All dependant on how you like your smoothie. (:

Pasta, The Ultimate Comfort Food.

The other night, I made a greek pasta salad for dinner. Pasta is defiantly one of my favourite dinners...
It's hands down, the most comforting food out there. Along with chilis and casseroles of course!
It was a mix of...
Cucumbers, feta, cherry tomatoes, bell peppers, parsley, red wine vinegar, olive oil, salt, pepper, olives, and of course pasta.
One of my definite favourites!



A Mood...

So, yesterday evening/late afternoon, I got the craving to decorate a cake... I found strawberries and raspberries in the fridge and really wanted to make something with them, thus the cake was born.
I made a vanilla cake, with a simple white icing topped with berries.

Crepes!

Crepes are definitely a delicious breakfast, especially when you top them with bananas, blueberries, melted chocolate, *sweet maple fruit syrup, strawberries, yogurt, chia, and a pinch of cinnamon!


Another great way to enjoy crepes, stuffing them with nutella!

*To make the sweet maple fruit syrup, I put frozen fruit in a microwave or oven, strained the liquids and mixed with maple syrup.

Savoury Pesto Rolls!

I thought I'd try something different and attempted a new recipe, Pesto Rolls! These savoury rolls are a mix of pesto, feta, and sun-dried tomatoes all rolled up into a flavour sensation! I found these great for: Breakfast or a mid-day craving.
